About this coffee

At Finca Soledad, coffee is more than just a crop—it’s a reflection of time, place, and the hands that craft it. Every step in the process is guided by nature, from the energy of the pickers to the balance of microorganisms in the soil. After harvest, the cherries undergo 24 hours of controlled oxidation, allowing the flavours to develop with depth and clarity. A 72-hour mucilage fermentation follows, enhancing sweetness and complexity. Once fully primed, the cherries are depulped, washed, and carefully dried to the perfect moisture level—preserving the essence of the land in every cup.

The Farm

Situated on a stunning mountainside, Finca Soledad overlooks a picturesque valley through which the Intag River flows. Desiring to return to the earth after his career as an explorer and mountaineer, Pepe purchased the four hectares of land in 2010. It was then that his new life as a specialty coffee producer began. The area had previously been deforested, and Pepe and his team have worked hard to replant the land with 25,000 trees, gradually restoring the region to its former lush beauty. Growing coffee was far from easy, presenting Pepe with many challenges, but Finca Soledad has become increasingly sustainable, and a place of peace and contentment for all who live and work there. When asked what makes the farm so special, Pepe replies: “This is my life, this is where I find peace.” The unique aromas of the farm owe much to the tranquil atmosphere of the country, and the varieties cultivated here include Typica Mejorado, Sidra, Geisha from Ethiopia and Panama, Caturra, and Castillo.
